About a year ago I began noodling in my cookbooks. Mostly I would just score the dish on a scale of 1 to 10, but soon I found myself including substitution ideas or tweaking ingredient lists. Then I realized it would be fun to include the date or dates I had made that particular recipe. 

After awhile my noodling evolved to full on journaling. Now I find myself writing down the occasion for the meal or the guest who had a taste. Often I just write "the 3 of us for a regular dinner," but it's fun to look back on when I browse through my cookbooks. (Remember, I'm one of those crazies that actually reads cookbooks; and the Trader Joes Fearless Flyer - I love that thing!)



And how neat would it be if fifty years from now my granddaughter goes to make a chocolate cake and realizes that her grandma made the exact same thing for her dad's 5th birthday party 40 years earlier.

My friend Jessica left a comment the other day asking some questions about the adoption process. It's a crazy ride that apparently, like many big life changes, never goes completely smoothly - but here's the gist of what we will go through before brining our babies home:

(This our process with America World Adoption Agency for  an Ethiopian adoption for a young child. Domestic adoptions are very different as is the process in other countries and for older children.)

THE PAPER CHASE:

After acceptance with American World Adoption Agency we were sent what felt like hundred-thousand pdf documents to fill our and notarize. All these documents will go into a big packet called a dossier. The dossier is translated and sent to a branch of the Ethiopian government called the Ministry of Women's and Children's Affairs. They will either accept or deny our application (once accepted with an adoption agency your refusal in the foreign country is rare).

The dossier is primarily comprised of three main parts - a Home Study, Visa papers (for the child(ren), and for lack of a better term, "lifestyle"documents.

The Home Study is conducted in-state with a social worker. He (in our case) visited our home three times and did both personal and couple interviews. Asking us things from how we handle stress to our saddest childhood memory to our feelings about meeting our adopt child's birth parents. After touring the home tour, interviews, meeting Landon, two sets of fingerprints, and document collection (he needed a stack of paperwork too) then he wrote a report on us and our ability to raise adopted children. The report is about 10 pages in length and pretty much covers our entire life story.

Our Home Study should be finalized tomorrow! This is huge for us and I am really excited to check it off as done. Then I will take a copy of the completed Home Study report to send away for our visa(s) for the adopted children. This involves more paperwork, finger-printing, and time as we wait for immigration to process our papers.

Meanwhile, I have simultaneously been working on dossier lifestyle papers. This stack of paperwork includes things such as birth certificates, medical exams, blood testing, police clearances, letters of recommendation, employment letters, proof of insurance, ten hours of online adoption education, etc. Each and every paper must be notarized. We have collected and notarized about 80% of these documents already! woot! woot!

Once all three parts of collected we will have the entire stack state certificated. Then is is ready to go to AWAA and from there is will be translated and sent to Ethiopia!

At that point we are considered DTE (dossier to Ethiopia).

PAPER PREGNANCY

The next step is called the paper pregnancy. And, like a natural pregnancy, mostly involves a bunch of waiting. And reading about being parents again (our agency gives us 5 books to read plus a whole list more to consider). Praying and preparing our hearts for our referral.  Mostly likely we will wait 7-10 months for referral.

REFERRAL.

At some point during the paper pregnancy our family will be "on deck." This means we are towards the top of the adoptive parents list and our referral call should come shortly. The referral call is very, very exciting. Referral is when a family is "matched" with a child or children. We will be sent pictures and medical reports for the children. We can then either accept of reject our referral. You may only reject a referral two (or three) times.

You might wonder why I am unsure if we will be adopting one or two children. The reason being is we have requested to adopt two young siblings. And although there are many, many orphaned siblings in Ethiopia not all children have the necessary paperwork required to be adopted. Therefore, when it is time for our referral young siblings may not be available. If that is the case we will be matched with one infant.

COURT

After accepting our referral the child(ren) are transferred from the orphanage to our agency's transition home. Then we wait for our Ethiopian court date. This can happen quickly or, once again, take a few months. Once we have a date we quickly (you often don't have too much notice) fly to Ethiopia (trip #1). We get to meet our child!! and (hopefully) pass court the first time. Sometimes you don't pass immediately and therefore have to go home while your agency stands in for you.

Honestly, I don't know too much about the process after this point. I haven't yet been filled in. However, I do understand that usually there isn't much time between the two trips (2-6 weeks). Some parents chose to stay in Ethiopia for the entire time. I would absolutely love to but I'm not really certain that is feasible for us. We will see.

HOME

Obviously, the second trip is to pick up your child and bring them home!! We would also love to spend some time exploring Ethiopia and our son/daughter's cultural heritage.

My heart is heavy today. Rosey, one of my blog friends (isn't it amazing how you can feel intimately connected with someone you have never met. it's one of my favorite things about this blog world. i think sometimes we women have difficulty opening ourselves up and being vulnerable and the "anonymousy" of the online diary gives us the freedom to share our heart - something to think more on later), along with her husband and son,  are suffering greatly today. 


Six months ago Rosey's precious daughter, Nina, was diagnosed with an inoperable brain tumor. Yesterday she went to be with the Lord. 


Hold your babies close today. Give your loved ones an extra squeeze. We just never know how long we have with them. Each and everyday is a precious gift.

It was cold on Friday. A good day for snuggles and beanies

I have no images from Saturday b/c I spent the entire day with a nasty cold.
RJ took Landon around town for the entire morning so I could sleep in and rest. Love that man.

L is really into all things transportation - cars, trucks, planes, trains, tractors, diggers, excavators, dump trucks, cranes, etc.

(And I'm learning so much along the way. Who knew that excavators and tractors aren't the same thing?!)

Two days ago Landon and I were watching glee a television show together. We were all snuggled up on the couch and I was thinking about how sweet and wonderful my little monster man is. A commercial for a cell phone came on, I think it was for a Droid, and it featured this little green space-alien-thingy. The little green alien was floating around going on and on about 4G networks and so forth. Suddenly the alien fell down, or bumped into something, I can't quite remember. And my precious, innocent son shouts -


"Uh-Oh!! F*ck!"


 I nearly swallowed my tongue in shock. I just sat staring at him as he continued to shout obscenities at the screen; racked my brain to remember if I had ever accidentally dropped an f-bomb in his company. I couldn't remember a single incident so I wondered who I was going to have to blame - and then it suddenly dawned on me:


He's saying FROG. 


He thinks the little green alien is a frog. "Uh-oh, FROG."


whew. 


Now I just spend my time asking him to say "frog" for my own amusement. It's hilarious.

For the past few days I've been feeling like there is a gremlin living in my tummy. 
I've been SO hungry. 
And when I'm hungry I bake.



For Valentine's day I made this strawberry cake. Full of nasty stuff I wouldn't normally eat
but holidays are a time for indulgence and frosting. 

Btw - does anyone else watch The Food Network when working out?
I always watch Paula while running on the treadmill.
I can't decide if it's some kind of weird torture to watch a woman frying up Southern food while feeling my bum bounce or if it's motivation? 

We currently have an abundance of leeks in the garden. 
And since I remembered that the very first recipe in Mastering the Art of French Cooking
was Potato Leek soup I figured it was time to crack the spine and try my hand at channeling Julia.



So easy. Only 5 ingredients (potatoes, leeks, water, salt, and cream)
And SO good.
That's why she's my hero.

Soup is good but the real reason  I  most of us eat soup is so we can consume later quantities of bread.
I eat like my two year old - with lots of sauce and dipping.

After feeding my boys their soup and bread last night I met the girls at one of the best restaurants in town for Tuesday night grilled cheese night. Grilled goat cheese with red pepper jelly dunked in organic tomato and white bean soup. Pinot grigio. Lemon bar, cheesecake and flourless chocolate cake with peanut butter mousse. 

It's like I'm pregnant.
But I'm not.
Well, only on paper. 
Does that count for eating copious amounts of food?

I am super emotional today. Jessica email me the below picture and when I opened it I immediately teared up.

 I am longing to hug and hold and kiss all my babies today. It's so hard knowing that my son(s) or daughter(s) could be spending Valentine's day hungry or lonely or scared. Will he get cuddled today? Is she still living with her biological family or is she alone in an orphanage? Is there enough to eat? I don't even know if he's a lima bean in growing in his mother or a tiny infant sharing a crib with three friends. But I do know that I love her and miss her and long for her.

The good news is that everyday we are getting closer and closer to bringing him/her/them home. I think these next two weeks are going to be huge in terms of completed paperwork. Our Home Study is 90% done (yay!!) and I've collected more than half of our dossier documents. We just need to get a few more things notarized, visit the police station for more clearances and finalize our Home Study. Then we can send away for our USCIS paperwork.  At that point we are 80% finished with the paper chase. Once we're done then we start waiting.

Paperwork is nice in a way because I feel as though I am doing something, but the waiting doesn't start until we finish our dossier. And the wait could be long, so I'm eager to start waiting.

In the meantime i'm going to smoother my handsome husband and sweet firstborn with love today. I'm so thankful to have them within arms reach. They are my cake to my ice cream, the coffee to my morning, the bacon to my eggs. I love you boys.

Valentine's Day is one of my favorite holidays. I love all the pink. 
I love the cute cards. And I love the conversation hearts. 
The white ones are the best.

Two days ago I spend Landon's nap time putting together Valentine's for all his friends.
It is so fun to relive your childhood through your child 
(as long as you don't go overboard and start acting, or worse yet - dressing!, like a youngster again).

And I can honestly say I got super excited about it.

When you marry the boy you marry the family. And how STOKED am I that this lovely gal came along in the package.


Jessica not only completely redesigned my entire blog for me but she did it with the utmost patience and grace. A particularly challenging endeavor considering my "direction" was completely vague and non-discript: 


"Ummm, I think I would like it if there were some birds. Yay. And maybe a vintage/modern/contemporary/victorian feel."

It is absolutely crazy insane windy today.  Swimming lessons were canceled since a tree fell and broke a power line. The gym had to close up too. Obviously our sunny beach community is totally prepared for bad weather.

The wind isn't the only thing rushing around our house lately. A certain little man with white blonde hair and big blue eyes has been whirling around like a tornado. (Unless TV is on. That kid sees a lit up screen and it's instant glue.) He's growing, and moving, so fast it's frightening. I am so afraid I'm going to forget all his little mannerisms and funny quirks.



His current obsession is cars. Landon loves the movie, the figurines and the real deal. It's all about cars all day long. When we were gone I bought him four little Matchbox cars. Best $5 I ever spent.

He continues to be a dancing machine. Family Dance parties have been a regular event throughout his life - complete with surround sound and dimmed lights - hardcore. But RJ and I unintentionally created a little pop music monster. The boy is CRAZY about Lady GaGa. Seriously. He can recognize all her songs and refuses to listen to anything else (except he will compromise with JT's Sexy Back). Just Dance and Poker Face are his favorites. He doesn't like Alejandro. A recent conversation in the car:

Mom: Let's try something new Landon.    switching on country
Landon: No Dance. No Dance!!      translation: bad music, bad music
Mom: switches back to the pop station. Brittney Spears is playing
Landon: GAGA! GAGA!




Mealtime continues to go well - as long as there is sauce. Landon is a great eater. He'll eat pretty much anything dipped in either ketchup or salad dressing. During the times I've told him he may not have sauce he's so distraught he'll actually pretend, dipping his food into imaginary sauce.

Our boy is incredibly affectionate and will give just about anyone a hug. Even non-expecting folks at Starbucks.

His vocabulary is growing by the day. He now speaks in full sentences and pretty much gives me a running commentary on his entire day.


Potty Training is still far in our future. Hating to have his diaper changed because it takes away from play time he lies about having dirty underpants.

We are totally in the "MINE" phase. Actually, I'm not sure how to handle it so if you have any tips please share! He loves his friends and talks about seeing them all the time. But then the moment they come over he begins shouting "mine, mine" and runs to protect his stash of toys. It's so dramatic you would think he's shielding baby animals from outrageous harm or something.

Whenever he makes something out of legos it either flies or bulldozes. And it always makes lots of buzzing, whizzing, crashing, and chopping sounds.


He can charm the socks of near anyone. Does it to me everyday.
