This week on our menu:

Sunday: Pasta with Pesto, salad with ranch dressing 
Monday: Salmon, Fried Potatoes, Salad
Tuesday: Harvest roast chicken with grapes and olives, Goat cheese sourdough toasts, Salad
Wednesday: Black bean and rice bowls
Thursday: Macaroni and Cheese, Salad
Friday: Date Night!
Saturday: Double Date Night! 


Notes:
- I got totally spoiled last week. My mom was in town and insisted that RJ and I get out Friday and Saturday night. No cooking and free babysitting!!! (Thanks, Mom! You're the best!)
- The Harvest roast chicken is delicious (the sauce!) and so easy. (And you can cheat like I do and ask the butcher at the store to cut your chicken up for you.)
- Bean and Rice bowls are a family favorite. It's pretty much a Chipolte bowl at home. Start with beans and rice and then add fixings to your taste. We usually add bell peppers, salsa, cheese, lime juice, corn, avocado, sour cream and chips - more or less depending on what's in the house.
- In the past I just use canned black beans but the Black Bean Ragout recipe from the Smitten Kitchen Cookbook is so easy and much more flavorful than canned beans. It's a slow cooker recipe so you can do it in the morning and forget about it. Definitely my new preferred method.
- We were supposed to eat dinner with friends on Halloween but my kids were sniffly, so we canceled dinner and just ate Mac N Cheese from a box. Sometimes you just need those nights.
